Walk into almost any dim sum restaurant and youâll likely spot some version of youtiao. In China, theyâre commonly eaten at breakfast alongside congee, but similar versions also appear across Southeast and East Asia, including Thailand, Laos, Cambodia, and the Philippines, often under different local names.
In Cantonese, youtiao is called yĂ uhjagwĂĄi, which translates roughly to âoil-fried ghost.â The unusual name comes from a well-known legend dating back to the Song Dynasty. The story involves a corrupt official, Qin Kuai, who allegedly played a role in the wrongful execution of the loyal general Yue Fei. Outraged citizens expressed their anger through food symbolism: two dough figures representing the official and his wife were shaped, pressed together, and deep-fried in oil while vendors shouted âfried Kuai!â Over time, this symbolic protest snack became the youtiao we know today.
What makes good youtiao?
The ideal youtiao has a deep golden exterior that is crisp yet light, with a soft, airy interior full of hollow pockets. The contrast in texture is what makes it so enjoyable.
Traditional versions sometimes rely on specialized ingredients to achieve this structure. Some cooks use dried cuttlefish bones, which contain calcium compounds believed to help improve puffing and delay browning, resulting in a crunchier shell. Others incorporate ammonium-based leaveners (like ammonium carbonate blends), which are known for creating an extra crisp bite in baked goods.
However, these ingredients can be difficult to source and tricky to use correctly. Cuttlefish bones donât fully dissolve and can be inconvenient to work with, while ammonium carbonate has a strong smell that can linger if not fully baked off.
A simpler approach
For a more accessible homemade version, baking powder alone can achieve a light, airy result without complicated ingredients. The key lies in technique rather than specialty additives.
Developing strong gluten structure through thorough kneading is essential, as it allows the dough to expand properly during frying. Adding an egg helps with richness and structure.
Instead of oil, butter can be used to enrich the dough while keeping it manageable. Oil sometimes makes the dough too loose, while butter adds flavor and improves texture.
Shaping the dough
A signature step in making youtiao is the shaping process. Two strips of dough are placed together, pressed down the center with a chopstick, and gently stretched before frying. When done correctly, the finished piece splits into a light, butterfly-like shape with large airy pockets inside.
Resting the dough is also important. Allowing it to sit for several hoursâor overnightâhelps relax the gluten, making it easier to stretch and shape without tearing.
Frying technique
Oil temperature plays a major role in the final result. The ideal range is around 390°F to 400°F (about 200°C). If the oil is too cool, the dough wonât puff properly; if itâs too hot, the outside will brown too quickly before the inside expands.
Constant gentle movement while frying helps ensure even puffing and color. The dough should gradually expand, float, and turn golden within a short frying time.
How to enjoy youtiao
Youtiao is traditionally served in many ways. The most classic pairing is with warm congee for breakfast or lunch. Another popular option is dipping it into sweetened soy milk.
Beyond that, it can be used creativelyâwrapped in rice noodle rolls, chopped into soups, or even stir-fried into other dishes. Its versatility makes it both a breakfast staple and a fun ingredient in fusion cooking.
Final thoughts
Youtiao may look simple, but it carries deep cultural history and relies heavily on technique for success. With the right dough development, careful shaping, proper resting, and controlled frying temperature, you can recreate this iconic street-food favorite at home with light, airy, satisfying results.

Incredible Historical Facts About Lighthouses That Will Blow Your Mind
The historical timeline of maritime illumination begins with the Pharos of Alexandria located in Egypt, which is recognized as the first known structural beacon in human history. Constructed under the rule of Ptolemy I and his successor Ptolemy II between the years 300 and 280 B.C., this massive tower reached an astonishing height of approximately 450 feet. It earned a legendary status as one of the Seven Wonders of the Ancient World before suffering gradual destruction by military invaders and severe earthquakes, ultimately crumbling completely during the fourteenth century. Meanwhile, the Tower of Hercules in La Coruna, Spain, is widely celebrated as the oldest standing operational beacon in existence today, tracking its origins back to around 20 B.C. Another ancient Roman structure erected in 40 A.D. still occupies the historic Cliffs of Dover across the English Channel in the United Kingdom.
