Tiramisu is somewhat similar to an icebox cake, with layers of cookies and a creamy filling. However, it has a few defining elements that make it unique.
The filling begins with zabaglioneâa mixture of egg yolks, sugar, and a splash of alcohol like marsala wine or rum. This mixture is gently cooked over a double boiler while being whisked until it becomes light, airy, and pale in color. This step forms the flavor base of the dessert.
How to Make Tiramisu
To give the filling structure and stability, mascarpone cheese is whipped together with heavy cream before being combined with the cooled zabaglione. This method helps prevent the mixture from becoming grainy or separatingâan issue that can sometimes happen when mascarpone is added directly to the egg mixture.
Once the cream mixture is folded together, youâre left with a smooth, rich, and slightly boozy filling. After that, assembling the tiramisu is quite simple, followed by a long chill in the refrigerator to set.
When I made this for Christmas, it turned out to be a huge successâespecially helpful since I slightly overcooked the main dish! The tiramisu held its shape well, sliced cleanly, and added a special touch to the evening.
Helpful Tips for Perfect Tiramisu
Let the zabaglione cool properly: It should be at room temperature or just slightly warm before mixing. If itâs too hot, it can melt the whipped cream.
Whip the cream at the right time: Wait until the zabaglione has cooled so the whipped cream stays stable and fresh.
Combine mascarpone with cream first: This makes it easier to incorporate smoothly and avoids a grainy texture.
Soften mascarpone gently: Mix it briefly on its own (15â30 seconds) before adding cream, being careful not to overmix.
Add cream gradually: Pour it in slowly while mixing to create a smooth, stable texture.
Aim for firm peaks: The whipped cream should hold its shape but still have a slight softnessânot too stiff.
Ingredients
6 large egg yolks
1 cup sugar (divided)
3 ounces dark rum (divided)
1 œ cups mascarpone cheese (cold)
1 cup heavy cream (cold)
1 cup boiling water
1 tablespoon instant espresso powder
1 package ladyfingers (7 ounces)
Unsweetened cocoa powder for dusting
Instructions
Prepare the Dish
Lightly grease an 8x8-inch baking pan.
Make the Zabaglione
Set a heatproof bowl over a pot of simmering water to create a double boiler (make sure the bowl doesnât touch the water).
Whisk egg yolks with Ÿ cup sugar until smooth, pale, and slightly thickened. The mixture should feel silky with no sugar grains remaining.
Add the Rum
Slowly whisk in 2 ounces of rum. Continue whisking over the heat for about 10 minutes until the mixture becomes thick, airy, and light in color.
Remove from heat and allow it to cool to room temperature.
Whip the Mascarpone and Cream
Using a mixer, beat the mascarpone briefly until smooth.
With the mixer running, slowly pour in the cream and continue mixing until the mixture forms firm, soft peaks. Avoid overmixing.
Combine Mixtures
Fold one-third of the whipped mixture into the zabaglione to lighten it, then gently fold in the rest.
Prepare the Coffee Mixture
In a shallow dish, mix the remaining sugar, rum, boiling water, and espresso powder until dissolved.
Assemble the Tiramisu
Quickly dip each ladyfinger into the coffee mixtureâjust enough to moisten them without soaking.
Arrange a layer in the pan, spread half of the cream mixture on top, then repeat with another layer of soaked ladyfingers and the remaining cream.
Chill
Cover and refrigerate for at least 8 hours, or up to 24 hours, to allow the dessert to set and flavors to develop.
Serve
Dust the top with cocoa powder before serving. Slice and serve directly from the dish. Leftovers can be stored in the refrigerator for up to five days.
Final Thoughts
Tiramisu might seem like a complicated dessert at first, but once you break it down, itâs surprisingly approachable. With a bit of care and patience, you can create a rich, elegant dessert at home that tastes just as goodâif not betterâthan the restaurant version.

Incredible Historical Facts About Lighthouses That Will Blow Your Mind
The historical timeline of maritime illumination begins with the Pharos of Alexandria located in Egypt, which is recognized as the first known structural beacon in human history. Constructed under the rule of Ptolemy I and his successor Ptolemy II between the years 300 and 280 B.C., this massive tower reached an astonishing height of approximately 450 feet. It earned a legendary status as one of the Seven Wonders of the Ancient World before suffering gradual destruction by military invaders and severe earthquakes, ultimately crumbling completely during the fourteenth century. Meanwhile, the Tower of Hercules in La Coruna, Spain, is widely celebrated as the oldest standing operational beacon in existence today, tracking its origins back to around 20 B.C. Another ancient Roman structure erected in 40 A.D. still occupies the historic Cliffs of Dover across the English Channel in the United Kingdom.
